A truly country snack, prepared by rich and poor alike during the jackfruit season. The leaf (EDANA) in which it prepared gives it a very distinctive taste.
Ingredients:
500 gms ripe jack fruit (seed removed) (Cleaned and ground fine in a blender)
250 gms jaggery
100 ml water (for melting jaggery)
70 gms grated coconut
250 gms fine rice flour
¼ teaspoon Eastern Cumin Seed
4 Cardamom (seeds powdered fine)
¼ teaspoon salt
30 edana leaves (for cooking the jackfruit cone)
Method of preparation:
1. Chop the cleaned jackfruit and grind in a blender to a fine liquid paste.
2. Add grated coconut to the jackfruit paste.
3. Melt the jaggery in 100 ml of water. Strain into the above mixture.
4. Mix well. Add the flour and mix again.
5. Add the powdered cumin, cardamom and salt.
6. Make a cone with the leaf and stuff in the above mixture.
7. Fold the flap of the leaf over and steam for about 30 minutes or till done.
