A healthy delicacy of the Kerala household. The Banana flower used here is of the Kerala variety of Bananas known as (Nenthraka). The banana flower helps in burning down the fat in the body. The lentil used in the preparation is rich in protein and a combination of the two really makes it a health food.
Ingredients:
Dressed Chundu (Banana flower) : 360 gms. (Chooped fine)
Eastern Turmeric Powder : 1 tsp. (for cleaning the choppped Banana flowe)
Green gram : 100 gms.
Water for cooking the gram : 300 ml
Salt : 1/4 tsp.
Grated coconut : 100gms.
Green chillies : 10 gms
Shallots : 2 Nos.
Eastern Turmeric powder : 1/2 tsp.
Curry leaves : 2 springs
Mustard : 1 tsp.
Salt : 1 tsp. Or as required
Method of preparation:
· Remove a few outer sheaths of the banana flower and chop the inner flower fine by hand. Or You could cut into it into medium sized pieces and mince it in a mincing machine.
· Wash the chopped banana flower in plenty of water to which 1tsp.of turmeric is added.
· Remove from water and squeeze dry.
· Cook the green gram in a pressure cooker with 300 ml of water and 14 tsp salt
· on medium heat for 10 minutes . If there is any water left allow it to evaporate
· Heat the oil and add the mustard. When it crackles add the curry leaves.
· Add the chopped banana flower and saute for a minute.
· Grind the coconut coarsely along with the shallots, green chillies and turmeric. Add salt.
· Place this mixture over the chopped banana and let the steam pass through.
· Then mix well, add the cooked gram and mix again and steam for another 5 minutes.
