1. Soak rice in water for 4 hrs. Drain off the water and grind the softened rice to make very fine powder.
2. Roast the rice flour for about 5 minutes and stir continously. Cool the powder.
3. Mix salt with water and sprinkle the salted water to the powdered rice just enough to make the powder wet (do not put a lot of water. There should be no lumps. It should be powdery, yet moist. (The mixture should form a ball on squeezing but fall apart as powder when released.)
4. Steam in a PUTTUKUTTI - a cylindrical steamer with a circular sieve provided for the steam to seep in. Alternatively, you can also use an idli steamer. Put a handful of grated coconut in the puttukutty followed by rice flour, halfway through and then another handful of grated coconut. Repeat this till the top.
5. Cover the steamer with the lid and steam it for 2 minutes.The cooked puttu will come as blocks which can be smashed into fine soft powder.
6. Serve with any spicy curry, chicken curry, fish curry or sweet mixed with sugar, pappadam, small plantain & ghee.
