Coconut Milk Stew
 
  Ingredients:
60 ml coconut milk (1st extract)
375 ml coconut mild (2nd extract)
½ teaspoon Eastern Dried Ginger Powder
½ teaspoon cardamom powder
2 teaspoons Eastern Cumin Seed Powder
400 gms jaggery
100 ml water
1 ½ teaspoon fine rice flour
50 ml water
Salt to taste

 Method:

1.    Melt the jaggery in 100 ml of water, Boil for a minute and strain.

2.    Mix the jaggery with the 2nd extraction of coconut milk.

3.    Add the ground cumin seed and mix well. Boil for sometime.

4.    Add the ginger and cardamom powder.

5.    Add the 1st extraction of coconut milk.

6.    Add the rice flour mixed with 50 ml water and simmer till the syrup thickens a bit.

7.    Never let it boil after the 1st extraction of coconut milk has been added.

8.    Add salt to taste. Remove from fire.

9.    Serve along with the Appam.
