Ingredients

500 gms yellow pumpkin
1 cup toor dal
A lemon sized ball of tamarind (soaked for 5 minutes)
1 tablespoon jaggery
2 tablespoon Eastern Sambhar Masala
¼ teaspoon Eastern Turmeric Powder
1 teaspoon Eastern Dhania Powder
1 teaspoon Eastern Red Chilli Powder
½ teaspoon Eastern Cumin Seeds
½ teaspoon Eastern Mustard Seeds
3 whole red chillies
1 sprig curry leaves
4 onions
1 tomato
1 tablespoon coriander leaves (chopped)
2-3 flakes garlic
2 tablespoon oil
Salt to taste

Method

1. Wash and pressure cook dal until very soft. Add tamarind, half tomato and 1 chopped onion to the dal.

2. Chop the remaining onions and tomato to medium or fine pieces. Heat oil and add mustard seeds, curry leaves and allow to splutter. Add onion, pumpkin, tomato and stir fry for 2 minutes. Add dal and bring to a boil on high. Add enough water to get sambar consistency. Simmer for 12-15 minutes on low fire, till it releases a flavour.

3. Add chopped coriander leaves before serving. Serve hot.
